This is a rocket science recepie –
First of all purchase kairs, while purchasing them keep in mind they must be very small and try to break them with nails if it beekas easily they are Best kairs.
Now comes the toughest task, removing the sticks of kairs 😂😂
This is totally very tough so I would suggest sit with whole family and break them.
( Secret Tip – Soak Kair in salted water, and leave them in it, like this you can break sticks in ten days in few quantity and save yourself from tiredness )
After 10 days the kair will look like this when you take it out of salted water.
After this the next step is to dry them on a maslin cloth .
Apply few turmuric powder and salt till evening .
Take out the yellow kairs out of it before readying for pickle .
Heat eatable oil in a big pan, Add Kairs , Sauf (fennel seeds) , chilly powder, turmeric powder, salt as per taste (preferable less as kairs are soaked in salt water ), mustard seeds (grinded)
Now leave it for three four days like this under shadows of sun rays
Oil should be flowing upon kairs, chilly and turmeric powder depends on the color n spice you love .
After four days add Kalunji (Nigella Sativa one big spoon )
The pickle is ready .
It can be stored in glass jars
And remains eatable for two years or more, depends on the way you take care of it 🙂
It is superb and goes with rice, chapati, monaco biscuits, mathari, chasts, bhel muri and many more things.
